 If I set up an e-commerce site in teh UK, do I still have to pay tax on it, just like an offfline business?

 Yeah, in the United States, they don't discriminate.  It doesn't matter where you're income comes from, it's ALL taxable!

 I am pretty sure the only way out of taxes is to get an offshore account that is on an island. You just have to be careful because a lot of them are scams.
